Pea, Lentil & Chickpea Recipes to Please


HELENA, Mont. -- For the second consecutive year, Montana leads the nation in pea and lentil plantings, accounting for more than 40 percent of the U.S. crop. To celebrate this fact and help consumers enjoy the fruits of Montana farmers’ labors, the Montana Department of Agriculture has compiled a list of websites featuring recipes using peas, lentils, and chickpeas.



Summer is a time for backyard get-togethers and celebrations accompanied by favorite foods, beautiful sunsets, pleasant evening breezes, and the sound of crickets.


"Food is a centerpiece of the good life in America, showcased this time of year by barbequed meats and vegetables complemented with salads, summertime fruit, and light desserts," said Agriculture Director Ron de Yong. "I encourage folks to use the list and make their dish the talk of the next party."


Protein-packed and fiber-rich legumes can be featured ingredients in appetizers, pasta salads, vegetable salads, pilafs and entrees, and even in desserts and breads. Most of these food offerings are perfect for summer -- light, cool, and nutritious. Published by industry groups, companies, and culinary magazines, the websites typically organize recipes by meal and course; a few even organize recipes by ethnic origin.
